200 grams Cashewnuts fried
3 tbs. Lemon juice
1 tsp. Mustard
2 tsp. Honey
1 tbs. Olive oil or vegetable oil
1 clove Garlic chopped
1/4 tsp. Salt & pepper to taste
100 grams Paprica or red bell pepper thinly sliced into stripes
1 pcs Fresh chilli (optional) seeded, thinly sliced into stripes
1 bunch Spring Onion thinly sliced
1 buch Lettuce leaves,
Using a mortar and pestle, pound garlic until well pulverised. Place garlic in mixing bowl. Add lemon juice, honey, mustard, salt, pepper and olive oil.
Add spring onion and bell pepper, toss gently. Taste and if necessary add more honey, chilli or lemon juice.
Sprinkle with cashew nuts and toss again. Add nuts only before you serve-keeping them crisp. Serve on a bed of lettuce leaves, with garnish of your choice.
To remind the cashew nuts crisp when you serve. Sprinkle the cashew nuts sort before you serve this salad.
